Spanish: Sofrito Sauce

(makes 4 cups)

Ingredients:

Procedure:

  1. Saute onions in olive oil until soft and caramelized (about 10 minutes)
  2. Add the garlic and saute briefly (about 1 minute)
  3. Add the red wine, bring to boil
  4. Add the tomatoes, peppers, vegetable base; stir and bring to a boil
  5. Add the paprika, ground cinnamon, agave nectar, liquid smoke; stir and simmer for 10 minutes
  6. Add salt and pepper to taste
