Spanish: Sofrito Sauce

(makes 4 cups)
Ingredients:
- 1-2 tablespoons olive oil
- 1 yellow onions, chopped
- 4 garlic cloves, minced
- ½ cup red wine
- 2 cans (28oz) diced tomatoes
- 1 jar (7 oz) roasted bell peppers, chopped
- 2 teaspoons vegetable base
- 2 teaspoons smoked paprika
- 1 teaspoon ground cinnamon
- 2 tablespoons agave nectar
- ½ teaspoon liquid smoke
- Salt and pepper to taste
Procedure:
- Saute onions in olive oil until soft and caramelized (about 10 minutes)
- Add the garlic and saute briefly (about 1 minute)
- Add the red wine, bring to boil
- Add the tomatoes, peppers, vegetable base; stir and bring to a boil
- Add the paprika, ground cinnamon, agave nectar, liquid smoke; stir and simmer for 10 minutes
- Add salt and pepper to taste
